Thai Curry is different from India's curry in that the paste is created mostly from aromatic herbs rather than the mix of spices. Thai curry is commonly made by mixing the curry paste, coconut milk/cream, and adding protein and vegetables.
In ancient times coconut milk was not always used in making curries and some curries today are still made that way. Spiciness levels of each curry vary based on the amount and assortment of chili peppers.
Curries are served most commonly with rice or fermented rice noodle, and some curry such as yellow or massaman curry is sometimes served with roti.
